Steps and Ingredients for Banana Cream Pie

3 ripe banana’s – sliced thin when assembling pastry cream

2 cups graham cracker crust

1 pint whipped cream

½ cup melted chocolate

Directions:

Graham Cracker Crust

1.25 cups graham crackers ground

2 oz. white sugar

4 oz. melted butter

1 tsp. vanilla extract

  1. Combine graham cracker crumbs with clarified butter
  2. Add vanilla and sugar
  3. Mix all well by hand

Pastry Cream

1 cup Half n Half

1 cup whole milk

¼ cup white sugar

5 egg yolks

¼ cup corn starch

1 tsp. vanilla extract

2 tbsp. butter

  1. Combine Half n Half with half of the sugar in a sauce pan.
  2. In a medium bowl whisk together egg yolks, corn starch and the remaining sugar.
  3. Bring the Half n Half with sugar to a boil. Make sure to keep an eye on it, as soon as it boils take it off the stove.
  4. Slowly pour the hot Half n Half into the medium bowl with the egg yolks whisking at the same time until all is mixed well.
  5. Place the mixed liquid back into a clean sauce pot and heat slowly. While this heats use a rubber spatula to scrape the sides and bottom until thick.
  6. Strain the cream mixture thru a sieve or chinois to remove any lumps.
  7. Mix in Vanilla extract and butter. Stir until butter is melted, then let cool

Whipped Cream

1 pint of heavy cream

2 tbsp. confectioners’ sugar

1 tsp. vanilla extract

Melted Chocolate

3 oz dark chocolate melted (1 min in microwave)

Assemble:

  1. Pour the pastry cream into the pie dish with a spatula. Spread the pastry cream to fill the pie shell and level it.
  2. Add the sliced bananas on top of the pastry cream evenly.
  3. Top with whipped cream using a piping bag with a star tip.
  4. Sprinkle melted chocolate over the whipped cream and serve.
